Recipe: Mini Fresh Watermelon Cake


When I think of summer, I think of watermelon!  This delicious fruit is a nutritional powerhouse filled with cancer-fighting vitamins and antioxidants. Like most fruits, watermelon is rich in vitamin C. It is also an excellent source of vitamin A as well as a powerful antioxidant called lycopene that is responsible for the red pigment.

Watermelon is 92% water, 6% natural sweetness and 100% deliciousness and makes a healthy snack everyone loves. But what can we do with it to elevate this beautiful fruit?

Yes, that’s right. We’re transforming watermelons into CAKE. But that catch is, there is no actual cake.

If you’re in a hurry or baking is just not your thing, thankfully, there are many ways to get creative in the kitchen without turning on the oven, like with this awesome recipe. This is hands-down the most refreshing, guilt-free cake you will ever eat.

And just when you thought it couldn’t get any better, this cake is organic, gluten-free, vegan and added sugar-free: perfect way to please each one of your guests and the kids!

Ingredients:

  • Big watermelon slices
  • Big, medium and small square/circle cutters
  • For decoration: Edible flowers or fresh mint leaves. You can also top it with a spoonful of whipped cream, if you like.

Step 1:
Use a sharp knife to cut big round circles and peel the rind off your watermelon.

Step 2:
Use the big, medium and small cutters to cut out three square/circle pieces.

Step 3:
Stack the watermelon pieces on top of each other on a serving dish. Refrigerate.

For decoration and added deliciousness:
Cut individual mint leaves or edible flowers right before service. Sprinkle on top of your mini cake or between each tier.

Step 4:
Serve and SURPRISE!
